Tableside Sgroppino

 

A Sgroppino sits somewhere between a cocktail and a dessert and is a welcome addition to our table-side offering at Gimlet. The Sgroppino was popularised in 16th-century Venice as a vehicle for well-heeled aristocrats to display their stockpiles of elusive and temperamental ice. There, an eau de vie, ice, lemon and sugar were whipped into a frenzy, producing a pillowy digestif to enjoy at the end of grand banquets. 

Our take is presented to the table in a frozen bowl. Over lemon gelato our waiter pours ice-cold Meletti limoncello and a generous glug of DOC Prosecco. With the flick of a wrist, the combination is emulsified, decanted into a frozen martini glass, topped with lemon zest and a final splash of Prosecco. Voilà!
